A palavra em japon\u00eas \u00e9 formada por dois <em>kanjis<\/em>,\u00a0<\/span><span style=\"font-weight: 400\">\u548c <\/span><span style=\"font-weight: 400\">(wa<\/span><span style=\"font-weight: 400\">), que significa &#8220;japon\u00eas&#8221; ou &#8220;harmonia&#8221;,\u00a0e\u00a0<\/span><span style=\"font-weight: 400\">\u98df <\/span><span style=\"font-weight: 400\">(shoku<\/span><span style=\"font-weight: 400\">), que significa &#8220;comida&#8221; ou &#8220;refei\u00e7\u00e3o&#8221;. Assim, a palavra significa n\u00e3o s\u00f3 &#8220;comida japonesa&#8221;, mas tamb\u00e9m simboliza a harmonia que a culin\u00e1ria japonesa almeja.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Dependendo da ocasi\u00e3o, a culin\u00e1ria japonesa tradicional tamb\u00e9m \u00e9 chamada de\u00a0<\/span><i><span style=\"font-weight: 400\">nihonshoku <\/span><\/i><span style=\"font-weight: 400\">(<\/span><span style=\"font-weight: 400\">\u65e5\u672c\u98df<\/span><span style=\"font-weight: 400\">) or \u201cJap\u00e3o-comida,\u201d em uma tradu\u00e7\u00e3o literal. Outro termo comum \u00e9 <em>n<\/em><\/span><i><span style=\"font-weight: 400\">ihonryori <\/span><\/i><span style=\"font-weight: 400\">(<\/span><span style=\"font-weight: 400\">\u65e5\u672c\u6599\u7406<\/span><span style=\"font-weight: 400\">), que significa \u201cculin\u00e1ria japonesa.\u201d<\/span><\/p>\n<h2><b>Ichijyu Sansai <\/b><\/h2>\n<p><span style=\"font-weight: 400\">O conceito principal do washoku \u00e9 o\u00a0<\/span><i><span style=\"font-weight: 400\">ichijyu sansai <\/span><\/i><span style=\"font-weight: 400\">(<\/span><span style=\"font-weight: 400\">\u4e00\u6c41\u4e09\u83dc<\/span><span style=\"font-weight: 400\">), que significa &#8220;um caldo e tr\u00eas acompanhamentos&#8221;. Ele foi descoberto em\u00a01908 no Jap\u00e3o pelo professor Kikunae Ikeda e \u00e9 uma parte fundamental do washoku. Umami \u00e9 encontrado em\u00a0alimentos que cont\u00e9m amino\u00e1cido glutamato, seja naturalmente ou atrav\u00e9s da fermenta\u00e7\u00e3o e envelhecimento.<\/span><\/p>\n<p><span style=\"font-weight: 400\">A culin\u00e1ria washoku usa poucos ingredientes, mas s\u00e3o ingredientes que possuem um <em>umami<\/em> elevado, como cogumelos <\/span><i><span style=\"font-weight: 400\">shiitake <\/span><\/i><span style=\"font-weight: 400\">secos<\/span><span style=\"font-weight: 400\">.
